Mexican Layered Dip

This easy layered Mexican Dip is the ultimate party platter recipe. Made with refried beans, fresh guacamole, salsa, sour cream and cheese, it’s quick, flavour-packed and perfect for entertaining or family snacking.

Ingredients

Mexican Dip Layers
  • 400g refried beans (optional but recommended)
  • 1 cup fresh guacamole (see below)
  • 1 cup jarred salsa
  • 1 cup sour cream or Greek yoghurt
  • 1 cup grated tasty cheese
  • 2 tablespoons chopped fresh coriander (to garnish)
Fresh Guacamole:
  • 2 ripe avocados
  • ¼ small red onion, very finely diced
  • 1 small tomato, deseeded and finely diced
  • 1 small handful coriander (stems and leaves), finely chopped
  • Juice of ½ lime
  • Salt and cracked black pepper, to taste
  • Optional: finely diced chilli or chilli flakes
To serve:
  • Corn chips
  • Vegetable crudités (carrot sticks, capsicum strips, cucumber, celery)

Instructions

Step 1 – Make the Guacamole
  1. Halve the avocados, remove the seeds and scoop the flesh into a bowl.
  2. Mash with a fork to your desired texture (chunky or smooth).
  3. Add red onion, tomato and coriander. Mix gently to combine.
  4. Stir through lime juice, salt and pepper. Taste and adjust seasoning if needed.
Step 2 – Assemble the Dip
  1. Spread refried beans evenly over the base of a serving dish.
  2. Spoon and gently spread the guacamole over the beans.
  3. Add a layer of salsa.
  4. Spread sour cream evenly over the salsa.
  5. Sprinkle with grated cheese and garnish with fresh coriander.
  6. Serve immediately with corn chips and vegetable sticks.

Notes

Top Tips:

Make ahead: Assemble up to 4 hours ahead and refrigerate. Add cheese and garnish just before serving.

Spice level: Add finely diced chilli to the guacamole for extra heat.

Keep guac green: Press plastic wrap directly onto the guacamole layer if prepping ahead to prevent browning.
