No Mexican dish is complete without Pico De Gallo!  This Pico De Gallo is a fresh, zesty Mexican salsa that’s as versatile as it is easy to make. With just five simple ingredients - tomatoes, red onion, coriander, lime, and seasoning - it adds a burst of flavour to everything from tacos and burritos to nachos and quesadillas.

Ingredients

  • 4 ripe tomatoes, seeded and finely chopped
  • ¼ red onion, finely chopped
  • Juice of 1 lime
  • ½ cup chopped fresh coriander (cilantro) leaves
  • Salt and pepper, to taste

Instructions

  1. Prepare the tomatoes: Cut each tomato in half and use a teaspoon to scoop out the seeds and watery centre. Dice into 1cm cubes.
  2. Mix: In a medium bowl, combine the chopped tomatoes, red onion, lime juice, and coriander.
  3. Season: Add salt and pepper to taste. Mix well.
  4. Serve: Enjoy immediately as a topping or dip. It pairs perfectly with tacos, nachos, burritos, quesadillas, enchiladas—or even grilled meats and fish.
