Mint chocolate would have to be my husband’s absolute favourite, so it feels only fitting to make this Peppermint Chocolate Bark as a sweet Father’s Day treat.

Made with just two kinds of peppermint chocolate bars, it’s refreshingly minty, perfectly crispy and oh-so-simple. This no-bake wonder looks impressive but takes only minutes to make.  Perfect as a festive homemade gift, a quick dessert or a little after-dinner indulgence to keep in the fridge.

Peppermint Chocolate Bark

This Peppermint Chocolate Bark is a quick and easy no-bake treat made with your favourite peppermint chocolate bars. A simple homemade gift or dessert that’s perfect for Father’s Day, Christmas or a sneaky after dinner treat.

Ingredients

  • 150g milk chocolate melts
  • 1 tsp coconut oil (optional)
  • 1 x KitKat Chunky Aero Mint Milk Chocolate Bar (45g), chopped
  • ½ x Cadbury Bubbly Mint Chocolate Block (160g), chopped

Instructions

  1. Line a baking tray with baking paper.
  2. In a microwave-safe bowl, melt the milk chocolate melts and coconut oil on medium power for 60 seconds. Stir, then continue heating in 30-second bursts until smooth. (Alternatively, use the double boiler method.)
  3. Pour the melted chocolate onto the prepared tray and spread evenly with a spatula.
  4. Sprinkle over the chopped peppermint chocolate bars, pressing them lightly into the chocolate so they set in place.
  5. Refrigerate or freeze for 30 minutes, or until completely set.
  6. Break into pieces and serve. Or package in gift bags tied with ribbon for a thoughtful homemade treat.

  • Festive twist: Add crushed candy canes on top for a Christmas twist.
  • Double chocolate: Swirl through white chocolate for a marbled look.
  • Extra crunch: Sprinkle with crushed biscuits, Oreos, green or white M&Ms or crushed nuts.
  • Storage: Store in an airtight container in the fridge for up to 1 week.
