Chicken Caesar Sandwich

Who else is obsessed with a good Chicken Caesar Salad? After a recent lunch out with a friend, I couldn’t stop thinking about that iconic combination of flavours.

The crisp lettuce, smoky bacon, creamy dressing and parmesan. But instead of making a salad, I decided to turn it into something even more satisfying: a Chicken Caesar Sandwich.

Served on buttery toasted Turkish bread, these sandwiches are loaded with tender Moroccan-spiced chicken, crispy bacon, golden fried egg, fresh greens and a generous drizzle of Caesar dressing.

It’s a quick, easy and flavour-packed recipe that makes the perfect midweek dinner or weekend lunch. The best part? It’s a handheld version of your favourite Caesar salad.  Simple, delicious and guaranteed to please.

Ingredients

  • 4 Turkish bread rolls (or ciabatta/soft panini)
  • Butter, for toasting
  • Olive oil spray
  • 2 large chicken breasts
  • 1-2 tablespoons Moroccan seasoning (or smoked paprika + garlic powder)
  • 8 shortcut bacon rashers
  • 4 eggs
  • 1 small cos lettuce, leaves separated (or baby spinach)
  • Caesar salad dressing (Ranch also works well)
  • Parmesan cheese, shaved with a vegetable peeler

Instructions

  1. Cut each Turkish roll in half lengthways. Butter the cut sides and place them butter-side down in a preheated frypan on medium-high heat until golden. Remove and set aside.
  2. Slice each chicken breast in half horizontally to make 4 even pieces. Lightly pound with a mallet for even cooking.
  3. Sprinkle both sides with Moroccan seasoning.
  4. Heat a drizzle of oil in the pan and cook chicken 3–5 minutes each side or until golden and cooked through. Transfer to a plate to rest.
  5. In the same pan, fry the bacon until crisp. Remove to a plate.
  6. Add a little extra oil if needed, then fry eggs to your liking (break the yolk gently for a soft set, flip it over or keep it runny if you love the ooze).
  7. Spread Caesar dressing over the base of each toasted roll.
  8. Layer with chicken, bacon, egg, lettuce or spinach and parmesan shavings.
  9. Drizzle with extra dressing if desired, then top with the other half of the roll.
  10. Serve immediately.

Notes

TOP TIPS:

  • Make it lighter: Swap bacon for turkey bacon or skip the egg.
  • Cheese lovers: Add a slice of melted Swiss or cheddar along with the parmesan.
  • Meal prep tip: Cook the chicken and bacon ahead of time and reheat for fast assembly.
  • Bread swap: Turkish bread is great, but ciabatta, focaccia, or even a wrap works beautifully.
