Easy Beef Quesadillas

Made with a Mexican beef mince, packed with hidden veggies like grated carrot and zucchini, and layered with melted cheese, these quesadillas are a tasty and nutritious option.

Ingredients

  • ½ cup corn, frozen or fresh (optional)
  • ½ capsicum, diced (optional)
  • 500g Beef mince
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1 sachet taco seasoning
  • ½ cup water
  • Tortillas
  • Taco sauce
  • Grated cheese

Instructions

  1. Preheat a large frypan over medium-high heat and add a small amount of oil. Cook the capsicum and corn for 2 minutes.
  2. Add the beef mince and cook until browned. Drain excess fat if needed.
  3. Stir in the grated carrot and zucchini. Cook, stirring for 2-3 minutes, or until the vegetables have softened.
  4. Sprinkle the taco seasoning over the mixture, then add the water. Stir until combined and simmer for 2 minutes or until the mixture thickens and the water evaporates. Remove from heat and let it cool slightly.
  5. Preheat your toasted sandwich press.
  6. Lay a piece of baking paper on the bench and place 1 tortilla on top.
  7. Spread taco sauce over the tortilla, leaving a 2cm border around the edge.
  8. Spread the mince mixture over one half of the tortilla. Sprinkle grated cheese over the mince, then fold the tortilla over the filling.
  9. Fold the baking paper over the quesadilla and place the parcel in the toasted sandwich press. Toast for 2-3 minutes or until the tortilla is golden and the cheese has melted. Check after 2 minutes and continue toasting if necessary.
  10. Cut into wedges and serve with sour cream, Greek yoghurt, guacamole, salsa, taco sauce, or salad.

Notes

If you are trying to sneak some vegetables into the mince for the kids, but they will find the green zucchini, grate the zucchini and they won't know it's there!


I find if you cook the capsicum and corn first, enables the flavours to be enhanced rather than adding them with the grated vegetables.
