Spring Salad
Ingredients
- 120g baby spinach leaves
- 1 capsicum, cut into chunks
- 1-2 tomatoes, cut into chunks
- 1-2 cucumbers, cut into chunks
- A few cubes of marinated feta, crumbled
- Lemon wedges to dress the salad
Instructions
- In a medium sized salad bowl, pour in the spinach leaves
- Top with the chopped vegetables and gently toss together
- Crumble over the marinated feta
- A squeeze of lemon is a nice touch
- Serve with your favourite barbecued proteins.
