Ingredients

  • 120g baby spinach leaves
  • 1 capsicum, cut into chunks
  • 1-2 tomatoes, cut into chunks
  • 1-2 cucumbers, cut into chunks
  • A few cubes of marinated feta, crumbled
  • Lemon wedges to dress the salad

Instructions

  1. In a medium sized salad bowl, pour in the spinach leaves
  2. Top with the chopped vegetables and gently toss together
  3. Crumble over the marinated feta
  4. A squeeze of lemon is a nice touch
  5. Serve with your favourite barbecued proteins.

Notes

This is the perfect spring salad for a quick midweek meal or make a larger version and take to your next barbecue.


Ingredient measurements are approximate, you can use as much or as little vegetables as you like.
