Teriyaki Chicken Rice Bowls

Ingredients

Teriyaki Sauce
  • ½ cup soy sauce (salt-reduced or light, depending on your taste)
  • ¼ cup mirin
  • 2 tbsp sake
  • 2 tbsp brown sugar, or to taste
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp cornflour mixed with 1 tbsp water (optional, for thickening)
Chicken
  • 1 kg chicken thigh fillets, diced
  • Oil, for cooking
To Serve
  • Steamed rice, to serve
  • Carrot, red cabbage, cucumber and bean sprouts, to serve
  • Nori squares and Kewpie mayonnaise (optional), to serve

Instructions

Teriyaki Sauce
  1. Add the soy sauce, mirin, sake, brown sugar, garlic and ginger to a small saucepan. Bring to a gentle boil over medium heat, stirring to dissolve the sugar, then reduce the heat to low.
  2. If using cornflour, stir the cornflour mixture into the sauce. Simmer for 1–2 minutes, stirring, until slightly thickened. Set aside.
Chicken
  1. Heat a little oil in a large frying pan over medium-high heat. Cook the chicken in batches, turning occasionally, until golden and cooked through. Cooking time will depend on the size of your chicken pieces.
  2. Return all the chicken to the pan and reduce the heat to medium-low. Pour over the teriyaki sauce and toss gently until the chicken is well coated and the sauce is heated through.
To Serve
  1. Spoon the chicken over steamed rice and serve with carrot, red cabbage, cucumber and bean sprouts. Add nori squares and a drizzle of Kewpie mayonnaise, if you like.
