Easy Fattoush Salad

Quick and healthy Fattoush Salad recipe with spinach, tomatoes, cucumber, mint, parsley and crispy pita chips. Perfect for family lunches, easy dinners and summer meals.

Ingredients

  • 3 handfuls fresh spinach
  • 4 ripe tomatoes, chopped
  • 1 Lebanese cucumber, diced
  • 2 radishes, thinly sliced
  • Handful mint, shredded
  • Handful parsley, shredded
  • ¼ red onion, thinly sliced or diced
  • 1-2 pita breads, chopped into 1-inch squares
  • Light olive oil spray or drizzle
  • Optional: salt & pepper, lemon juice, sumac

Instructions

  1. Prep the pita chips: Preheat the oven to 200°C (400°F). Spread pita squares on a lined tray. Lightly spritz with olive oil. Bake for 5 minutes until golden. Let cool. Tip: Chop pita into small, uniform squares so they crisp evenly.
  2. Prepare salad veggies: In a large bowl, combine spinach, tomatoes, cucumber, radishes, mint, parsley and red onion.
  3. Dress and toss: Drizzle with olive oil, lemon juice and a sprinkle of sumac if desired. Season with salt and pepper. Toss gently.
  4. Add pita chips: Just before serving, fold in pita chips to maintain crunch.

  • Prep ahead: Chop vegetables and herbs the night before for a quick assembly.
  • Extra crunch: Toast pita slightly longer for crunchier chips, or use wholemeal pita for a nuttier flavour.
