Lamington Berry Wreath

My Lamington Berry Wreath is the easiest "no bake" Christmas dessert you will ever make. The best part is, it will be ready in under 30 minutes!!

Ingredients

Lamington Wreath
  • Barker’s Strawberry Sauce or Stawberry Jam
  • 600ml thickened cream
  • ⅓ cup icing mixture
  • 1 teaspoon vanilla
  • 1 punnet strawberries
  • 2 x 18 packs lamington fingers
  • Blueberries, raspberries, mint leaves to decorate

Instructions

Lamington Wreath
  1. In a chilled mixing bowl, add cream, icing mixture and vanilla. Mix on low speed until combined, then mix on high speed until stiff peaks form.
  2. Spoon the thickened cream into a piping bag. Snip 2cm off the end of the piping bag. Pipe a ring of cream around a flat plate or serving board. This ring of cream will secure the lamingtons in place.
  3. Pipe some cream onto 1 face of 1 lamington at a time. Place the lamington on its side into the ring of cream. Continue with each lamington/cream combination, sandwiching them around the edge of the plate until the wreath is complete. Cover and place in the fridge until it is time to serve.
To Serve
  1. Drizzle the strawberry sauce over the top of the lamington wreath.
  2. Reserve 2 strawberries and cut in half. Place the halved strawberries cut side up at each quarter.
  3. Finely dice the remainder of the strawberries and fill the rest of the space in with diced strawberries followed by raspberries, blueberries and mint.
  4. Serve with extra strawberry sauce , whipped cream and berries if desired.
  5. Place in the fridge to chill until serving.
