These Lamington Bliss Balls are a healthy twist on the classic Aussie favourite. Gluten-free, dairy-free and refined sugar-free, with a hidden raspberry centre. Perfect for Australia Day, lunchboxes or guilt-free snacking.

Ingredients

Lamington Bliss Balls
  • 1 cup cashews
  • ⅓ cup desiccated coconut
  • 2-3 tbsp maple syrup (or rice malt syrup)
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 12 whole raspberries (fresh or frozen)
Chocolate Coating
  • 2 tbsp maple syrup
  • 2–3 tbsp cacao powder or cocoa powder
  • 2–3 tbsp coconut oil, melted
  • 1 cup desiccated coconut, for rolling

Instructions

Lamington Bliss Balls
  1. Place cashews and coconut into a food processor and blitz until fine crumbs form.
  2. Add maple syrup, coconut oil and vanilla. Process until mixture comes together.
  3. Transfer mixture to a bowl and refrigerate for 30 minutes to firm slightly.
  4. Scoop tablespoon-sized portions, flatten gently, place a raspberry in the centre and carefully wrap mixture around it.
  5. Place on a lined tray and refrigerate for 30 minutes.
  6. Mix maple syrup, cacao powder and coconut oil in a small bowl until smooth.
  7. Dip each ball into chocolate using two forks, then roll in coconut.
  8. Return to the fridge until firm.

Notes

Top Tips

  • Chill first: Chilling the mixture before rolling makes shaping much easier and less sticky.
  • Don’t squash: Gently wrap the mixture around the raspberry to keep the centre intact.
  • Storage: Store in an airtight container in the fridge for up to 5 days.
