Peanut Butter Baubles

A quick, no-bake festive treat made with peanut butter, Rice Bubbles and a chocolate drizzle. Fun for kids and perfect for Christmas gifting!

Ingredients

  • ½ cup peanut butter
  • ½ cup rice malt syrup
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • 2 cups Rice Bubbles or puffed rice
  • 100g milk or dark chocolate melts

Instructions

  1. Combine peanut butter, rice malt syrup, cinnamon and vanilla in a small saucepan over low heat. Stir continuously until smooth and fully combined. Remove from heat.
  2. Add the Rice Bubbles and gently mix until everything is evenly coated.
  3. Scoop out small spoonfuls and roll into balls using your hands. Place on a lined tray.
  4. Refrigerate for 20-30 minutes or until firm.
  5. Place chocolate melts in a microwave-safe bowl and heat at 50% power for 1 minute. Stir well, then continue heating in 30-second bursts until smooth.
  6. Transfer melted chocolate to a piping bag or snap-lock bag, snip the end, and drizzle over the baubles.
  7. Refrigerate for another 30 minutes or until chocolate is firm. Enjoy!

  • For even mixing: Warm the peanut butter mixture just until smooth - overheated mix can make the baubles like toffee.
  • Wet hands to roll: A little water on your hands stops the mixture sticking as you roll.
