Healthy Easter Fruit & Nut Fudge
This healthy Easter fruit & nut fudge is a no-bake treat made with simple ingredients. Gluten-free, dairy-free and perfect for Easter entertaining.
Ingredients
- ½ cup nut butter of choice
- ⅓ cup rice malt syrup
- ¼ cup coconut oil, melted
- 1-2 tablespoons cacao powder (or cocoa powder)
- 1 tablespoon tahini paste
- 1 teaspoon vanilla
- ¼ cup dried fruit (e.g. cranberries, goji berries, raisins, chopped dried apricots)
- ¼ cup chopped nuts (e.g. almonds, cashews, walnuts)
- 1 tablespoon pepitas
- 2 teaspoons sunflower seeds
Instructions
- Add all ingredients (except fruit, nuts & seeds) to a mixing bowl.
- Stir until smooth and well combined.
- Fold through dried fruit, chopped nuts and seeds.
- Spoon the mixture into silicone Easter moulds (bunny shapes are perfect) or a lined square cake tin.
- Smooth the tops if needed.
- Place in the fridge for 2 hours or until firm (overnight is best).
- Carefully remove from moulds or slice into squares and serve.
